基于交叉污染视角的冷链食品质量控制分析

摘要
阐明交叉污染的发生机理,找出影响冷链食品质量的因素,运用Vensim软件对其因果关系进行分析。基于交叉污染视角,从冷链食品的生产和销售到客户的整个物流过程,分析了食品的各质量控制环节,设计出冷链食品的质量控制流程。为了进一步避免冷链食品交叉污染,提出两个解决方案,一是改善冷链食品的运输包装;二是改良设计专门的冷链食品运输箱。这两个方法不仅能解决交叉污染问题,保证冷链食品质量,还能节约物流成本,提升客户满意度,提高企业效益。
        The paper clarifies mechanism of cross contamination, finds out the factors affecting the quality of cold chain food andanalyzes the causality with Vensim software. Based on the cross contamination perspective, the quality control of the whole logistics circulation of food is analyzed from the production and sale of cold chain food to customers.The quality control flow of cold chain food is designed. In order to avoid cross contamination of cold chain food, two solutions are put forward including improving the transport package of cold chain food, and designing a special cold chain food container. These two methods can not only solve cross contamination problems, ensure the quality of cold chain food, but also save logistics costs, improve customer satisfaction and enterprise efficiency.
