摘要
花生中含有丰富的营养成分,但也含有能引起花生过敏者发生过敏反应的致敏蛋白。花生过敏患者误食含花生食品后,将引发严重过敏反应,且没有确切有效的治疗方法。因此,建立简单、快速、灵敏检测食品中花生过敏原物质的方法尤为重要。对花生中几种主要致敏蛋白和目前常见检测方法进行综述,并对其未来发展方向进行展望,为花生致敏蛋白快速检测的深入研究提供一定的参考。
        Peanuts are rich in nutrients,but also contain allergenic proteins that can cause peanut allergies. Peanut allergens will cause serious allergic reactions when they eat peanut food by mistake,and there is no effective treatment. Therefore,it is very important to establish a simple,rapid and sensitive method to detect peanut allergens in food. In this paper,several main allergenic proteins in peanut and the common detection methods were reviewed, and the future development direction was prospected,which laid a certain foundation for further study of peanut allergic protein detection.
