摘要
综述食品中酪蛋白磷酸肽的检测方法,主要包括高效液相色谱法、液相色谱-质谱联用法、毛细管区带电泳法、氯化钡-乙醇沉淀法等,分别介绍几种检测方法的优缺点及检测过程中面临困难。研究数据表明,高效液相色谱法具有操作简单、快速、灵敏度高等特点,在众多领域应用最为广泛。今后酪蛋白磷酸肽的检测方法应该以高效液相色谱法为基础,探索适用性更强的检测方法。为建立食品中统一的酪蛋白磷酸肽的国标检测方法提供有力参考。
        This article reviewed the detection methods of casein phosphopeptides in food,including high performance liquid chromatography,high performance liquid chromatography-mass spectrometry,capillary zone elect rophoresis and Barium-ethanol precipitation,etc.The advantages and disadvantages of several detection methods and the difficulties in the detection process were introduced.The research data showed that high performance liquid chromatography had the characteristics of simple operation,rapidity and high sensitivity,and was widely used in many fields.It was considered that the detection method of casein phosphopeptide should be based on high performance liquid chromatography to explore a more applicable detection method.The present paper could provided a powerful reference for the establishment of a national standard detection method for the uniform casein phosphopeptides in food.
