摘要
以维生素E为对照,对辣椒碱单体、二氢辣椒碱单体、降二氢辣椒碱单体和辣椒素的还原能力进行了考察,并通过体外抗氧化实验探讨了其对超氧阴离子自由基(O_2~-·)与羟基自由基(·OH)的清除能力,研究了其抗氧化能力。结果表明,辣椒碱单体具有明显的抗氧化能力,其抗氧化效果明显好于二氢辣椒碱单体、降二氢辣椒碱单体和辣椒素;进一步比较发现,4种物质的抗氧化效果依次为:辣椒碱单体>辣椒素>二氢辣椒碱单体>降二氢辣椒碱单体。因此,以辣椒碱单体为主要原料开发天然高效的食品抗氧化剂具有重要意义。
        Using vitamin E as a control,we investigated the reducing abilities of capsaicin monomer,dihydrocapsaicin monomer,nordihydrocapsaicin monomer,and capsaicinoids,discussed their scavenging abilities to superoxide anion free radical(O_2~-·)and hydroxyl free radical(·OH)by in vitro antioxidant experiments,and evaluated their antioxidant activities.The results show that capsaicin monomer has obvious antioxidant activity,and the antioxidant effect of which is superior to that of dihydrocapsaicin monomer,nordihydrocapsaicin monomer,and capsaicinoids.Through further comparison,the order of antioxidant effect is:capsaicin monomer>capsaicinoids>dihydrocapsaicin monomer>nordihydrocapsaicin monomer.Therefore,it is of great significance to develop natural and high-efficiency food antioxidants with capsaicin monomer as the main raw material.
