摘要
以‘西杂’牛(‘西门塔尔牛’♂ב河西黄牛’♀)为母本,‘西门塔尔牛’‘安格斯牛’‘德国黄牛’为父本杂交生产的15月龄架子牛为试验材料,进行育肥试验,并对其生产性能和肉用品质进行测定分析.结果表明:‘德国黄牛’♂ב西杂’♀组宰前活质量为712kg,蛋白含量为21.09g/100g,显著高于‘安格斯’♂ב西杂’♀组和‘西门塔尔’♂ב西杂’♀组(P<0.05);‘安格斯’♂ב西杂’♀组失水率为30.05%,显著低于‘德国黄牛’♂ב西杂’♀组和‘西门塔尔’♂ב西杂’♀组(P<0.05),日增质量为2.18kg,显著高于其他两组(P<0.05),其余各项指标差异不显著(P>0.05).‘德国黄牛’♂ב西杂’♀组具有较高的营养价值,‘安格斯’♂ב西杂’♀组具有较好的育肥效果和食用品质.
        Si-cataloes were used as female parent,and‘Simmental’,‘Angus’ and‘German Yellow’ were used as male parents to produce fifteen months store cattle for fattening test,and the production performance and analyzing the meat qualities were determined.The results showed that the weight before slaughter was 712kg and the protein content was 21.09g/100g of the‘German Yellow’hybrid,which were significantly higher than those of‘Angus’ hybrid and‘Simmental’hybrid(P<0.05),water loss rate was 30.05% of‘Angus’ hybrid,which was significantly lower than those of‘German Yellow’hybrid and ‘Simmental’hybrid(P<0.05),the daily gain was 2.18kg,which was significantly higher than those of other hybrids,and other indicators exist differences,but the differences were not remarkable.The‘German Yellow’hybrid had higher nutrition value,while the Angus hybrid had better fattening effect and eating quality.
